What Is a Chickle?

A chickle is a combination of cheese and a dill pickle. In this recipe, the cheese is cooked in a pan and then wrapped around the pickle.

Tips for Perfect Chickles

  • You can use slices or shredded cheese but avoid low fat cheeses.
  • Use a nonstick pan for best results.
  • Ensure the cheese is bubbly, browned, and lacy to ensure it’s crunchy.
  • The cheese will become crunchy as it cools. Pat the pickles dry before wrapping to ensure crispy bites.

Servings 4 chickles

Ingredients  

  • 4 dill pickle spears or 2 whole dill pickles
  • 4 cheddar cheese slices or 2 cups shredded cheddar cheese
  • 4 tablespoons ranch dressing for serving, optional

Instructions 

  • If using whole pickles, cut them in half lengthwise. Dab pickles dry with a paper towel.
  • Heat a 6-inch skillet over medium heat.
  • Add a cheese slice or ½ cup of shredded cheese to the skillet. Let it cook undisturbed until it becomes browned and lacy on one side.
  • Add ½ of a pickle on one end and, using a spatula, roll the chickle jelly-roll style.
  • Using tongs, transfer to a paper towel lined plate and repeat with remaining pickles.
  • Serve with ranch dressing for dipping.
