This easy 3-ingredient recipe features dill pickle juice blended with grated pickles and a touch of sugar. The mix is poured into molds and placed in the freezer, making for a light, refreshing snack.

Freeze, Store & Enjoy
Freeze pops in airtight sleeves or molds for up to 2 months. Once frozen solid, transfer them to a freezer bag and serve straight from the freezer. If the popsicles are stuck in the molds, release them by running warm water over the outside of the mold for a few seconds.

Pickle Popsicles
Equipment

Ingredients
- 2 cups dill pickle juice
- 1 medium dill pickle
- 1 tablespoons sugar more as desired
Instructions
- Grate the pickle on the large side of a box grater.
- Stir together pickle juice and sugar until dissolved. Adjust sweetness to taste.
- Stir in the grated pickles.
- Using a small funnel, pour mixture into plastic freeze pop sleeves or a popsicle mold.
- If using popsicle sleeves, place them flat on a tray and freeze for 6–8 hours, or until solid.
Notes
- Pickle juice can be strained if it has lots of little bits of garlic and seasonings.
- After freezing, remove from molds and store in freezer bags. For best quality, consume within 2 months.
