What Are Pickle Popsicles?

This easy 3-ingredient recipe features dill pickle juice blended with grated pickles and a touch of sugar. The mix is poured into molds and placed in the freezer, making for a light, refreshing snack.

Serve them along with pickle chips and dill pickle dip (or pickle slushies!) and dare your guests to give them a try. I guarantee they will brighten any gathering and get the conversation started!

Holly’s Recipe Highlights

  • Flavor: Zesty dill brine with a lightly sweetened balance that stays bright and icy.
  • Prep Note: Be sure to fully dissolve the sugar to keep the popsicles from being gritty.
  • Tools: Popsicle sleeves (my personal fav!) or any basic popsicle mold will work for this recipe.
  • Freezing: Freezes solid in 6 to 8 hours and stores well all season.

Pickle Basics

  • Dill Pickle Juice: Use the juice from your favorite jar of pickles; strain it if it contains lots of herbs or garlic pieces for a smoother popsicle.
  • Dill Pickle: Grated pickle adds texture and keeps the popsicles from freezing solid. Use refrigerated deli pickles for extra crunch.
  • Sugar: Helps balance the tang and improves texture. Add more or less depending on the brine’s saltiness.
  • Variations: Swap in spicy dill pickle juice for a kick, or use bread-and-butter pickle juice for a sweeter pop. Omit grated pickles if you prefer a smoother, firmer texture. Want to warm things up for winter? Add a splash of hot sauce, a pinch of tajín, or chili powder.

Holly’s Popsicle Pointers

  • Chill the brine before freezing to help the dill pickle popsicles set evenly.
  • Taste the mixture first; every brand of brine has different salt and tang levels.
  • If using popsicle sleeves as I do, freeze them on a flat tray so they’ll keep their shape.
  • Include grated pickles to add bursts of flavor and prevent them from hardening too much.
  • If your freezer runs cold, let the pops sit at room temperature for a minute before serving.

Freeze, Store & Enjoy

Freeze pops in airtight sleeves or molds for up to 2 months. Once frozen solid, transfer them to a freezer bag and serve straight from the freezer. If the popsicles are stuck in the molds, release them by running warm water over the outside of the mold for a few seconds.
